A quick note re the last post- I forgot to point out the fairly crucial point that the actual presence of 1-phenylethanethiol in wine is unproven because its threshold of perception is quite a long way below the capacity of current machinery to measure it! So it may be there sometimes, it may not. We don’t know - the science around these volatile sulphur compounds is quite new. It’s quite amazing that there are compounds like this that humans can smell, but machines can’t measure…
